Due to a change in website platforms, a necessary step to enhance and update the CAT FANCY magazine website, it will no longer be possible to host Club Cat. WowWee! When mom signed into Knight Gang's account this morning 6/23/2011 and was ready to write down who was in the COTD Window, she seen it was me! What a total SURPRISE! When mom came out to feed us this morning, mom told me that I won my 3rd Cat of the Day AND my 2nd Cat Rescue of the Day Badges. Mom gave me yummy treats and said I will get more tonight.

HAPPY MOTHERS DAY MOMS!Hope you all have a really special day,sending you a bouqet of roses,and a box of Mothers Day candy.

How are you today,58 here might have rain later.I gave mom an early morning mothers day kiss right on her nose,and then she took me our for my exploring walk.Nothing much going on,lots of birds singing,but I did find a new mousey hole,I dug in it but nothing there,guess mousey was sleeping in.Ate some grass,checked out MY stump,there sure are lots of tall grass around it to check out,and I love sticking my nose down in the huge hole under the stump to look around,mom said there might be a stump monster there,ahh mom,there is not,better move my little nose,hehe.Then I saw Oreo looking at MY stump,I said you better get away from there or you will get a wack!Checked out all MY spots,said hi to all barn animals,they all just looked at me.Then mom said time to go in,ahhh mom do we have to,guess we do,oh you should have saw me chasing a butterfly yesterday,it went by and I junped way up in the air turned a flip in the air and landed right back on my feet,hehe,mom was laughing at me,wheee,that was fun mom can I do it again,hehe!Mom had the camera but it was all to fast for her to get a picture,she said that would have been a prize winner!Ok,now I'm in,ate some treats,checked out all MY things all ok,wacked Buddy as I went by,well he was looking at me,hey wait a minut,I see mr.sun peeking out,come on out mr,sun and leave the rain behind,so guess I will nap awhile,love you,Spongie.Hi,Muffy in his bed,Missy,Blossie,Buddy,Wicket on bed,Cindell on counter,Baby on Spongies cat tunnel,we each gave mom a Mothers Day kiss and now its nap time,love you,The Gang.Hi,I,Bootsie,Rambo are all on our way to moms for Mothers Day,and we are leaving each mom magical angel dust Mothers Day kisses,hugs on our way,love you,Angel Gypsy.Spongie here,I'm dreaming of jumping way up,and catching a buterfly fly high in the air,hehe!!HAPPY MOTHERS DAY!!

Please vote for Terri #100035 April 9 COTD
Terri, my sister, was born 5 years ago April 10. She has been my little companion all this time since we were fostered together and then adopted by our Mom. It hasn’t always been easy for Terri. She began life as a feral kitten, then during foster had respiratory problems. Last year, she had serious gum problems and had all her teeth removed. During her recovery I was running for COTM in April 2010, and really feel I neglected her during the two months through May. Today she is a happy and well little kitty. She even muscles in to MY food dish and finishes what I don’t eat! I let her because I love her. She makes me proud to be her brother by adoption.
Terri is active in MHL on the KA team, playing as a great defensecat. She is also the editor of our Cat Business Directory.
It is with admiration for Terri that I am asking you to give Terri her second COTD on April 10 as a birthday present by pawing a vote for her today April 9. Thank you and pawhugs, Shadow

Hello dear Tori & all the Jersey Gang kitties!! This is Charlie writing here.
My brother Simba told me I can blog today while he´s relaxing and rolling over the grass in the back yard. We are having around +90F again and the bad storms we had are all over now. I´m glad Mr.Sun is back with us. Those rains and thunderstorms were pretty scary and I didn´t like them. Specially the night that they broke a couple of tree banches in our garden. Dad said it was nothing to worry about, but I did worry. (MOL!!)
This afternoon I had lots of fun after stealing two hair bands from Mommy. They were over the bathroom sink. I saw them and had to "explore" them. They turned out to be great "kitty toys" (Tee-hee!!). You can chew them,take them in your mouth and catch them. Mom wasn´t so happy to see my new toys, but I´m not planning to give her them back.
Daddy brought home two little Shih-Tzu doggies. He says they will be staying with us for about 10 days. He is taking care of them because their owner is having vacations. What a bummer!! Willow and I hate them to pieces. They keep on barking every time they see us!! I can believe that... Perhaps they need to be reminded that they´re actually staying in OUR home. (MOL!!)

Hi Victoria & NJ Cats
Weekend blog: CATching up on the past week. Sent Mom off to work every morning again after the long holiday weekend.Was expecting snow Thursday into Friday, but it didn’t; just a little dusting of white. Yesterday we helped mom do the laundry. I ran downstairs to the basement & checked behind the storage racks & made sure there were no mice. Shadow made it down to the second step at the top of the stairs. Mom’s finally caught Shadow to brush his fur; usually he keeps running & hiding under furniture MOL!! We’re having fun chasing the laser lights we got for Christmas especially the length of the first floor from front door to back door. Now we’re expecting snow Tuesday through Wednesday, but not counting on it just yet. Saying prayers for our furfriends whose pawrents are recovering from illnesses. Have a great week & we’ll CATch up again next week with our blogs. Purrs, Terri

We hope you had a wonderful and very merry Christmas!!
We're so glad to be writing back to you tonight. It has been long since we blogged last time.
We missed you very,very much!!
We had a nice but really hot one over here in Buenos Aires.
We had 96F on Christmas Eve. That was soooooo hot!!
Santa Paw brought canned tuna and some new ball toys for all of us. (Purrrrsssss...!!)
Since we're having such hot weather,Willow,Pucca and me have been spending much time napping in front of the fans and under the trees in our garden. The garden is full of birdies and they are always lots of fun.
Dad has been feeding another stray kitty that comes to visit us every day. He is black and white too. Mommy calls him Charlie. We like this little buddy a lot. He is friendly and loves rolling over the grass.

I’m dropping by with a basket of tuna flake cookies & a pot of catnip tea and to thank you for your sweet message for me.

I’m having to do this c/p, to say hi, so that I can get caught up and relax and blog normally, again. Woo Hoo!!

WOW, we had breakfast in bed this morning – can you believe it??? Mom said it’s the first time ever for her! Uh Oh, I’m afraid she’s going to like this pampering and we'll have a hard time getting her out of the castle after the month is over. :)

This morning, I knocked on Winslow’s door and we had a wonderful time investigating some of the rooms. I think my favorite (so far) is the beautiful library. There are just so many beautiful books (and lots of them have colored pictures, too), but that’s not my favorite part of the library - It’s all those little steps. Winslow, Sienna & I had so much fun climbing up and down all those little steps.

This is our first full day in the castle and we are planning to make holly wreaths. The fun will begin at 1:30 in the big greenhouse. The gardeners have all the holly, cedar, fir branches and supplies to make our wreaths. There’s lots of ribbons, berries, fruits, pine cones and other materials, so you can just design to your heart’s content.

This evening, after dinner, music will be provided by the Kool Cats and they will be playing in the 2nd floor ballroom. Music will start at 9:00. There’s lots of other entertainment, if you don’t want to dance. We have movies showing, card games in the game room, charades, or you can also just walk around the grounds and enjoy the beautiful twinkling lights in the garden.

Happy November 30, 2010. It’s Tuesday and the last day of the month and the last day of my catpaign. I’ve had a wonderful time visiting all of you each day and sharing the fantastic recipes contributed by many of the CC kitty families.

I wish to thank each and every one of you for your wonderful support during my catpaign this month. I’ve met some sweet new kitties, reconnected with many old friends, and enjoyed visiting with each and every one of you. We’ve shared some good times this month – celebrating happy news, birthdays & adoptiversaries, and we’ve shared some hard times too – losing some precious friends, going through some serious illnesses & tragedies with some of our dear kitty friends and families; however, the CC Family has been there for each and every kitty. What a wonderful community of caring, loving and friendly kitties and families. I am very blessed to know each of you and to count you as my friends.

Our wonderful King Winslow #132020 (my Valentine ?) has served us with compassion, friendship and honor. Let’s all go by today and leave him a message of support and thanks.

Today’s recipe is for a delicious & easy candy. Mom has made it many times and we are pleased to share it with you.

COFFEE PENUCHE

**Note: This is from the Southern Living November 1998 Issue**

Ingredients -
• 3 cups firmly packed light brown sugar
• 1 cup brewed coffee
• 2 tablespoons light corn syrup
• 2 tablespoons butter or margarine
• 1 teaspoon vanilla extract
• 1/8 teaspoon salt
• 1 cup chopped pecans

Preparation -
* Cook first 3 ingredients in a large heavy saucepan over low heat, stirring until sugar dissolves. Cover and cook over medium heat 2 to 3 minutes to wash down sugar from sides of pan. Uncover and cook, without stirring, until candy thermometer registers 238° (soft ball stage).
*Remove from heat, and add butter, vanilla, and salt (do not stir). Cool to 175°. Stir in pecans, and beat with a wooden spoon until mixture thickens and begins to lose its gloss. Spread into a buttered 8-inch square pan. Cool until firm. Cut into squares.

* Yield: 2 pounds

Boo’s Tip: Store in tightly covered container with waxed paper between the layers.

Trust you had a nice Thanksgiving. What a cute poem you left on my page! Mom knows all the turkey meat she ate is on ON her hips! MOL

Mom about froze her tootsie off up in Michigan last week. Dad and her realized each day WHY they moved to FL! She experienced wind, cold rain, sleet, flurries, and frost. They did have a good time with family and friends and also attended a Wedding. Best news of all was they'll become grandparents for the 5th time! Their son and daughter-in-law are expecting their first in July!

Happy November 29, 2010. It’s Monday and this month is almost over…Can you believe it? I’ve had a wonderful time visiting all of you each day and sharing our recipes and the fantastic recipes shared by many of the CC kitty families.

It’s another “Cookie Day”! Today’s cookie is a quick and easy, but a really good fudge cookie and we hope you will enjoy it!

FUDGE-PECAN CHEWIES

Yield: 5 dozen

Ingredients -
• 1 (14-ounce) can sweetened condensed milk
• 2 cups (12 ounces) semisweet chocolate morsels
• 1/4 cup butter or margarine
• 1 cup all-purpose flour
• 1/2 cup chopped pecans
• 1 teaspoon vanilla extract
• 60 pecan halves

Preparation -
* Combine first 3 ingredients in a heavy saucepan; cook over medium-low heat, stirring constantly, until chocolate and butter melt. Remove from heat.
* Stir in flour, chopped pecans, and vanilla.
* Drop by teaspoonfuls onto ungreased cookie sheets.
* Press a pecan half into the center of each cookie.
* Bake at 350° for 7 minutes. (Do not overbake.) * Transfer cookies to wire racks to cool.

Boo’s Tip: (1) Substitute walnuts for the pecans or any other nut that you prefer.
(2) Substitute chopped packaged coconut for the ½ cup chopped pecans and place a candied cherry-half on top instead of the pecan half.
(3) For a really different but delicious treat, substitute raisins for the nuts.

NICE morning meows for the Jersey kitties
Hello & happy Monday to everyone from the NICE crew! Sorry it's been so long since we blogged! I’m doing a c/p today so we can get caught up & will also include a little purrsonal tidbit from each kitty or group.

~WHISPERS~ We’ve been busy flying & sprinkling all visiting family members as they traveled the busy roads. Dad’s oldest sister was unable to attend the family gathering due to illness so we’ve been flying back & forth to southern IN to sprinkle her with our healing dust as she recovers. Sending you mass sprinkles of love to start out your week! ~Angels Cloudy, Sherman & Outside angel gang~

~OUTER LIMITS~ Hello from the outside crew! I’m Adam & I’m the featured kitty pictured on our page. We’re all doing fine & have been faithfully using the cattery. Not a bed goes unused nor a morsel of cat food wasted when the outside dozen are around…MOL! We got our share of the Thanksgiving feast as did the dogs. We’re happy to have pawents that think about us at holiday time. Makes us feel very special & warms our bellies up at the same time! We’re waiting for the sun to come out so until it does we’re staying in our warm spots. Have a fabulous week! ~Adam & the outside crew~

~PURRCEPTIONS~ I hope everyone had a wonderful holiday! We’re ready to get back to normal…at least for a little while…MOL! I helped mom cook 2 fabulous meals last week & we both heard rave reviews so I think my help was appreciated. I’ll be finding a safe spot to watch her run the sweeper monster later but I’ll have my paws in the Christmas boxes when she digs into them again. Have a purrfect day! ~Patches~

~TATTLES~ Hi everybody! I’m excited about finding hidden treasures in those mysterious boxes dad took out to the family room. I got myself in a little trouble yesterday when I kept grabbing hands as they tried to get things out…including me…MOL! I LOVE boxes & the jingles & jangles inside are too much for me to resist. Dad put up a tree yesterday & meowmy decorated it with bells. Yes…I said bells! Geesh…I think she’s testing me but so far I’ve avoided the allure of the shiny, dangling objects. Not sure how much longer I can stand it though…MOL! Keep your paws crossed that I keep my paws where they belong! ~Trixie~

Z ZONE-I’ll continue to be the family blogger since my time was shortened by the holiday. We’ve had a wonderful time visiting with everyone that came over & I even got extra attention from a furiend of big sis’ that came along too. Teehee…she’s a sucker for my blue eyes! It wasn’t too difficult to coax some extra ham & turkey from her fingers…MOL! Mom get the house cleaned up after the long weekend so guess I’d better get pouncing. Have a pawsome day! ~Zaboo~

Happy Saturday, November 27, 2010! The holidays are coming and today, we want to feature that cookie that spells Christmas….The Gingerbread Cookie!!

This wonderful recipe was contributed by Felix, the “Mix Master” #148839 & Family Kitties’ Mom Ida) and we love it, because we can make the cookie dough and store in the refrigerator until we’re ready to bake….and it’s delicious, too!

FELIX’S GINGERBREAD COOKIES
(Recipe can also be used for making a ginger bread house)
(Contributed by Felix, the “Mix Master” #148839 & Family Kitties’ Mom Ida)

Ingredients:
• 4 to 5 cups All purpose flour (start with less)
• 1 cup Sugar
• 1 cup Shortening, melted
• 1 cup Molasses
• 1 tsp Baking soda
• ½ tsp Salt
• 1 tsp Cinnamon
• 1 tsp Ground cloves
• 1Tb Ground ginger

Preparation:
1. Melt shortening. Mix shortening, sugar, and molasses until light and fluffy.
2. Sift dry ingredients and add to sugar mixture. Mix until blended. Place dough in fridge overnight to let flavors blend (may store longer if needed). Dough will be stiff once cooled.
3. Preheat oven to 375F.
4. Roll dough into a thin circle and cut shapes with cookie cutters. Place cookies on baking sheet lined with parchment paper or silpat mats.
5. Bake at 375F for 9 – 11 minutes. Cool on wire rack.

Boo’s Tip: If you want to frost these cookies, you can use the Simple Frosting recipe from our Nov 12 Recipe Blog, or your favorite frosting. You can also used canned frosting or frosting pens to decorate, sprinkles, or other fun decorations on these cookies! Use your imagination and let your creativity flow.

Happy Thursday, November 25, 2010! It’s Thanksgiving here in the U.S.! We hope that all of you have a wonderful day and please remember to give thanks for the things for which you are most grateful. I’m grateful for all of you & the wonderful friendships we have developed here on the CC. This is the best website on the web!

Today, we are featuring a couple of easy and quick, but tasty, recipes.

The first recipe was submitted by Casper Todd, MerryBelle, & Sissy’s Nana & is for a delicious & nutritious soup.

NANA’S CABBAGE BEEF SOUP
(Contributed by Casper Todd #6451, MerryBelle & Sissy’s Nana)

Ingredients:
• 1 can Rotel tomatoes
• 1 can stewed tomatoes
• 1 large head of cabbage
• 1 large onion
• 1 can kidney beans – drained & washed
• 1 lb. hamburger meat – browned, drained & washed
• 1 bouillon cube

Preparation:
Combine all ingredients in a large pot. Add water to suit yourself (as much liquid as you like). Boil until cabbage is tender.

Boo’s Tip: A nice green salad, & a roll makes this a wonderful & well-balanced meal.

The second recipe is for a quick & easy cookie bar that is always a hit around our house…We all like quick & easy, right?

WALNUT-DATE BARS

Yield: Makes 16 squares

Ingredients
•- 1 (18.25-ounce) package yellow cake mix
• 2/3 cup firmly packed brown sugar
• 2 large eggs
• 3/4 cup butter or margarine, melted
• 2 cups chopped dates, divided
• 2 cups chopped walnuts or pecans, divided

Preparation
* Combine cake mix and brown sugar in a mixing bowl. Add eggs and melted butter, beating at medium speed with an electric mixer until blended (batter will be stiff). Spoon half of batter into a lightly greased 13- x 9-inch pan; sprinkle with 1 cup each of dates and walnuts.
* Stir remaining 1 cup each of dates and walnuts into remaining batter; spread over mixture in pan.
* Bake at 350° for 30 to 35 minutes or until golden. Run a knife around edge of pan to loosen sides. Let stand 30 minutes before cutting. Cut into squares, and store bars in an airtight container.

Boo’s Tip: To make this even easier & quicker to prepare, use the packaged chopped dates. We like “convenient” at our house.

Happy Monday, November 22, 2010! Thanksgiving is this coming Thursday, here in the U.S., so I’m sure that a lot of you are getting ready for the big day, whether you will be hosting the big dinner, sharing it at another home, or going out to eat.

Now remember kitties, when anyone is in the kitchen – always take your supervisory position right in the middle. As kitchen supervisors, it’s our duty to watch & critique everything that going on.

Today, I’m very pleased to offer you a delicious sounding recipe that our dear friends, former CC Queen Sabrina & her Mom Debby sent to us. It’s for an authentic & scrumptious Tiramisu & we are very anxious to try it, because it happens to be one of Dad’s favorite desserts & we know that he’s going to absolutely love it!

Sabrina’s Tiramisu

Ingredients:
•- 1 cup espresso coffee, cooled
• 5 tablespoons sugar
• 5 eggs, separated
• 16 oz. Mascarpone cheese *
• 2 packages Savoiardi or lady fingers
• 1/2 cup Stock 84 Brandy or Rum (optional)
• 1/2 bar bittersweet chocolate, grated

Preparation:
* Combine egg yolks, sugar, brandy & mascarpone.
Beat egg whites until stiff, fold into yoke/cheese mixture.
* Dip Savoiardi in espresso, make a layer in a square pan.
* Pour 1/2 of cheese mixture, add another layer of Savoiardi.
* Pour remaining cheese mixture over top. Sprinkle with grated chocolate.
* Refrigerate at least 8 hours before serving.

Note - If you cannot find mascarpone, mix together 12 oz cream cheese & 1/2 fresh heavy cream, whipped. (no cheating with cool whip!)

Boo’s Tip: I don’t have a real tip for this marvelous recipe. I just advise you to be prepared for a fantastic treat!

Happy November 20, 2010! It’s Saturday and the purrfect day to enjoy lots of fun together and also some “down time”, so kick back and relax – the coming week will be very busy for most of us.

We are featuring two wonderful recipes from a very special CC Kitty Family today. Sylvr Tuff Knight & the Girl Power Crew’s Mom Lillian sent this delicious sounding Pumpkin Pie.

SYLVR TUFF & GPC’s FESTIVE PUMKIN PIE
(Contributed by Sylvr Tuff # 160205 & Girl Power Crew’s Mom Lillian)
(Note from Sylvr Tuff – It is a bit time consuming, but the results are YUMMY!)

Ingredients:
• 2 Cup Baker’s Angel Flake Coconut
• ¼ Cup Butter or Margarine
• 2 Cup Prepared Dream Whip
• 1 Pkg Jello Vanilla Instant Pudding
• 1 Cup Canned Pumpkin
• ½ Teaspoon Cinnamon
• ½ Teaspoon Nutmeg
• ¼ Teaspoon Ground Ginger
• 2/3 Cup Milk

Preparation:
* Lightly brown coconut in butter. Keep 2 Tablespoons for garnish. Press remaining coconut over bottom and sides of oiled 8” pie dish. Cool. Mix 1 Cup Dream Whip with rest of ingredients. Beat until just well blended (about 1 minute). Pour into crust. Chill until set (about 3 hours).
* Top with remaining Dream Whip and Coconut.

Boo’s Tip: This pie sounds yummy – I suggest you bake 1 to “test” and 1 to serve. Tee Hee

The second recipe is from Rhoamin Knight & the Knight Gang’s Mom Lillian. This sounds like another winner to me!

RHOAMIN & THE KNIGHT GANG’S MYSTERY COCKTAIL DESSERT
(Contributed by Rhoamin Knight #2921 & the Knight Gang’s Mom Lillian)

• 1 Egg beaten
• 1 Cup Sugar
• ½ Teaspoon Salt
• 1 Teaspoon Baking Soda
• 1 Teaspoon Vanilla
• 1-1/4 Cups Flour
• 1 #303 Can Fruit Cocktail

PREPARATION: -
* Mix all together and pour into greased and floured baking dish.
*Sprinkle 1 cup brown sugar and ½ cup chopped nuts on top. Bake 1 hour and 10 minutes at 300 degrees.
*Serve with whipped cream.

Boo’s Tip: What a great recipe to prepare when you’re in a hurry and want to treat your family or guests to a delicious dessert – I think it would also be delicious with a scoop of vanilla ice cream.

Happy Tuesday, November 16, 2010. Yesterday, we featured Yum Yum’s delicious Pumpkin Bread & I’m hoping that today’s recipe will be enjoyable, too.

We love cranberries at our house & we like these cookies made with dried cranberries. We hope you like them, too!

Cranberry-Orange Shortbread Cookies

Yield: Makes 4 dozen

Ingredients
• 1 cup butter, softened
• 3/4 cup powdered sugar
• 1/2 cup chopped dried cranberries
• 1 tablespoon orange zest
• 2 teaspoons vanilla extract
• 1/2 teaspoon almond extract
• 2 cups all-purpose flour
• 1/4 teaspoon baking powder
• 1/8 teaspoon salt
• Wax paper

Preparation
1. Beat 1 cup softened butter at medium speed with an electric mixer until creamy. Gradually add 3/4 cup powdered sugar, beating until smooth. Stir in chopped cranberries, orange zest, vanilla extract, & almond extract until blended.
2. Stir together 2 cups flour, 1/4 tsp. baking powder, & 1/8 tsp. salt.
3. Gradually add flour mixture to butter mixture, beating at low speed until blended.
4. Shape shortbread dough into 2 (7-inch) logs. Wrap each log in wax paper, & chill 4 hours, or freeze logs in zip-top plastic freezer bags up to 1 month.
5. Preheat oven to 350°.
6. If frozen, let logs stand at room temperature 10 minutes. Cut each log into 24 slices. Place shortbread slices 1 inch apart on lightly greased or parchment paper-lined baking sheets.
7. Bake shortbread slices at 350° for 10 to 12 minutes or until edges of slices are golden.
8. Remove shortbread from baking sheets, & place on wire racks; let cool completely (about 20 minutes). Store in airtight containers.

Boo’s Tip: These are great to use for cookie swaps & to add to cookie trays for holiday gifts giving. Having the dough in the freezer, gives you many options during the upcoming busy holiday season.

Happy Monday, November 15, 2010! I hope your weekend was great and that you are looking forward to a wonderful week!

With Thanksgiving in the air and thoughts of that wonderful turkey, I would like to share a special recipe from a special friend today.

Yum Yum # 93255 and her sweet Mom Lynda, shared this delicious Pumpkin Bread recipe last year. Mom has made it a few times and always gets rave reviews!! It’s a great recipe to have, because you can even share some with neighbors, family, or friends!

Pumpkin Bread
(Contributed by Yum Yum #93255 and Mom Lynda)

Mix together gently:
• 4 eggs
• 3 cups sugar

Add oil, water and pumpkin mix – stirring to blend:
• 1 cup vegetable oil
• 1/3 cup water
• 2 cups “Libby’s Easy Pumpkin Pie Mix” Note: don’t use plain pumpkin

Sift together, flour, baking soda, salt and cinnamon – blend into mixture:
• 3 ½ cups flour
• 2 tsp baking soda
• 1 ½ tsp salt
• 1 tsp cinnamon

Then blend in nuts and raisins:
• 1 ½ cups chopped nuts (I use walnuts or pecans)
• 1 ½ cups raisins

Pour into 3 prepared (greased and floured) loaf pans. Bake at 350 degrees for approximately 60 minutes.

* The pumpkin bread is great with cream cheese!

Boo’s Tip: (1) Test for doneness by sticking a wooden pick in the center of the bread. It should come out clean.
(2) If there is a split down the center of the loaf…Don’t panic. The split is common in most quick breads and we like to say that it is actually a characteristic of quick breads.
(3) Makes a pretty & very welcome gift from the heart at Christmas time, too!

Happy Saturday, November 13, 2010!

Mom & Dad will be gone for quite a while today. It’s “Host of Christmas Past” in Fayetteville & Mom hasn’t missed the event in over 25 years. Up until 5 years ago, Mom & her Mother made it a girls-only fun time & they would spend the entire day looking at all the beautiful decorations in the downtown stores, exhibits, vendors & visiting with friends. Her Mother lived 1 block off the downtown square & Mom helped her host a couple of open houses on that special day in the past. Mom lost her Mother 5 years ago, but she said that she still feels her Mother with her as they attend the festivities.

The recipe today has a special meaning for Mom, because it was her Mother’s recipe & she always included it in her Open House Parties & other celebrations.

Christmas Fruit Bars

Oven - 350°
Pan - 9”x13” (Well greased)

Ingredients: -
½ Cup Butter or Margarine, Melted (1 Stick)
1 Cup Sugar
2 Eggs
1 Teaspoon Vanilla
2/3 Cup Flour (Plain)
1 Teaspoon Baking Powder
¼ Teaspoon Salt
1 Cup Pecans, Chopped
½ Cup Candied Cherries, Chopped

Melt butter & combine with other ingredients. Mix well (Use a large wooden spoon, or other large heavy spoon). Pour into prepared pan & bake 25-30 minutes, or until lightly browned.

Let cool completely in pan, cut into bars & carefully roll sides in sifted confectioner’s sugar or superfine sugar.

Boo’s Tip: (1) You can use both red & green cherries in the bars, for a festive touch.
(2) Chopped dates are a delicious substitution for the cherries in this recipe.

Happy Wednesday! Thanksgiving is just around the corner - I remember that I got a tiny taste of turkey last year at my very first Thanksgiving & Mom said that I licked that little plate for such a long. :)
We wanted to add a little “snap” to the week & we think that we found it. Today’s recipe for Gingersnap Cookies was contributed by Sir Sebastian Koko (#125649) & Family’s Mom Linda. Thanks so much, Mom Linda! We will definitely be baking these delicious sounding cookies & are sure they will be a big hit…especially with a cup of coffee or tea.

Gingersnap Cookies
(Contributed by Mom Linda, Sir Sebastian Koko #125649 & Family’s Mom)

(Note from Mom Linda): I am going to warn you...THEY BITE BACK...Especially if you use a br& new bottle of ground ginger. I admit, I LOVE spicy gingersnap cookies & this is the only recipe I ever found that gives me the bite that I love.)

• ¾ cup shortening
• 1 cup brown sugar (packed)
• 1 egg
• ¼ cup molasses
• 2 ¼ cup flour
• 2 teaspoons baking soda
• 1 teaspoon cinnamon
• 4 teaspoons ginger (yes...FOUR teaspoons! I told you this stuff bites back!)
• ½ teaspoon cloves
• ¼ teaspoon salt
• Granulated sugar

* Mix thoroughly shortening, brown sugar, eggs & molasses. Blend in remaining ingredients except granulated sugar. Cover & chill for 1 hour.

* Heat oven to 375. Shape dough by rounded teaspoon fulls into balls. Dip tops into granulated sugar. Place balls sugared side up 3 inches apart on parchment paper covered cookie sheet.
* Bake 10-12 minutes. Immediately remove cookies from baking sheet.

Boo’s Tip: This recipe sounds delicious, because we LOVE spicy things. However, you can successfully reduce the amount of ginger for less “bite”, if you wish.

Happy Tuesday! I hope you had sweet dreams and that you are ready for a fun-filled, absolutely purrfect day! Mom’s picking up pecans today. She orders pecans each year from a lady who gets them already shelled and ready for baking. She usually orders them in September and picks them up during the 2nd week of November, each year. We know that the holidays ARE coming, because the pecans are here.

Today, we are featuring a recipe given to us by Duchess #190247 & Angels Frosty & Moki’s Mom Ruthann. She said that her hubby’s Mom always used to make them, and they are so good! We think they sound wonderful and we will definitely be making these cookies!

Fantasy Cookies

(Contributed by Mom Ruthann, Duchess # 190247, Angel Frosty & Angel Moki’s Mom)

• 1 cup butter or margarine, softened
• 3/4 cup granulated sugar
• 2 large eggs
• 2 1/2 cups all purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1/2 cup each shredded coconut, chocolate chips, chopped nuts and M&Ms

* Cream butter and sugar, add eggs. Mix in flour baking soda and salt. Fold in remaining ingredients.
*Drop by tablespoons on cookie sheet.
*Bake 8-10 minutes in 350 degree oven. Cool
*Makes about 2 dozen

Boo’s Tip: To enhance the flavor of chopped nuts in a baked recipe, you might want to toast them prior to adding to the recipe. You can set the oven @ 350 degrees, put the nuts in a pan and roast them for about 6 minutes or so, until they are lightly toasted and fragrant. Be sure to watch them, so they don’t burn!

Happy Friday!! WOW, the weekend is right here and I hope you have all had a wonderful and fun week. I’m enjoying all this cooking and reporting, but my favorite part is visiting with all my friends!

With the weekend coming, I thought I would mix things up a bit today and share a couple of recipes from our November King Winslow, my Valentine ♥ ...Well, actually they are from his Mom and they are delicious appetizers, and I think you’ll enjoy making and eating these goodies!!

King Winslow’s Sausage Stuffed Mushrooms

• 24 to 36 large mushrooms, stems removed
• 1 tablespoon melted butter
• 1 cup sausage (I use Jimmy Dean's sage sausage) browned, crumbled and
• drained
• 1 - 8 oz package of cream cheese, softened
• 1/2 cup Parmesan cheese

*Toss mushrooms in melted butter to coat. Mix together sausage, cream
cheese and Parmesan. (I use my hands to mix this.) Divide equally among
mushrooms caps. Place in a large baking dish and bake at 350 degrees for
30 minutes.


King Winslow’s Zesty Stuffed Olives

• ½ carton cream cheese spread
• 1 - 5.75 oz can of jumbo or colossal black olives, drained
• 2 tablespoons zesty Italian dressing
• 2 tablespoons chopped fresh parsley

*Spoon cream cheese spread into small resealable plastic bag. Press cream
cheese into one of the bottom corners of the bag. Cut off small piece
from corner of bag. Squeeze cream cheese into centers of olives. Place
olives on serving plate. Drizzle with dressing. Sprinkle with parsley.

Boo’s Tip: Don’t forget to re-seal the plastic bag before you start squeezing the cream cheese into those olives!!

Happy Thursday, November 4th my friends. My goodness, the week is going by so fast, isn’t it? This has been a whirlwind week for us, visiting and talking to so many kitty friends....What fun!

I don’t know about you, but I'm ready for an easy recipe today. :) I think we found one that should fit the bill. Not only is it easy, it’s quick and fun to eat, too! And to those who don’t want any chocolate, please don’t forget to read my tip!

Peanut Blossom Cookies

Yield: 4 dozen
Ingredients
• 1 (14-ounce) can sweetened condensed milk
• 3/4 cup creamy peanut butter
• 1 teaspoon vanilla extract
• 2 cups biscuit mix
• 1/3 cup sugar
• 1 (9-ounce) package milk chocolate kisses, unwrapped
Preparation:
- Combine milk and peanut butter, stirring until smooth; stir in vanilla. Add biscuit mix, stirring well.
- Shape dough into 1-inch balls; roll balls in sugar, and place on ungreased cookie sheets. Make an indentation in center of each ball of dough with thumb or spoon handle.
- Bake at 375° for 8 to 10 minutes or until lightly browned. Remove cookies from oven, and press a chocolate kiss in center of each cookie. Transfer cookies to wire racks to cool completely.

Boo’s Tip: (1) It’s very important to unwrap those little chocolate kisses, okay? And don’t forget, just unwrap them, ‘cause we kitties can’t eat the kisses!!!
(2) For non-chocolate lovers – These little cookies are delicious with a half pecan or walnut placed in the center of each cookie, instead of the “traditional” chocolate kiss.

Happy Wednesday! This is my abbreviated version of my Catpaign Blog. You can read the entire blog on the CMR Page # 46883.

Today, our featured goodies are Chocolate Chunk Mocha Cookies. Dad is a chocolate freak and he loves mocha, so these cookies are a favorite with him. Of course, I’ve never tasted them but they smell really, really good!

Chocolate Chunk Mocha Cookies

Yield: Makes 3 dozen
Ingredients
• 2 1/4 cups all-purpose flour
• 2/3 cup unsweetened cocoa
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 1 cup butter, softened
• 3/4 cup granulated sugar
• 2/3 cup firmly packed brown sugar
• 1 teaspoon vanilla extract
• 2 large eggs
• 1 (11.5-oz.) package semisweet chocolate chunks
• Mocha Frosting (Recipe follows below)
Preparation
1. Combine flour and next 3 ingredients in a bowl.
2. Beat butter and next 3 ingredients at medium speed with an electric mixer until creamy. Add eggs, 1 at a time, beating just until blended after each addition. Gradually add flour mixture, beating at low speed until blended. Stir in chocolate chunks.
3. Drop dough by heaping tablespoonfuls onto parchment paper-lined baking sheets.
4. Bake at 350° for 10 to 12 minutes or until puffy. Cool on baking sheets 2 minutes; remove to wire racks, and let cool 30 minutes or until completely cool. Spread cookies with Mocha Frosting. Dust evenly with powdered sugar, if desired.
Note: Dough may be frozen up to 1 month or refrigerated up to 2 days. Let stand at room temperature before baking as directed.

Mocha Frosting Recipe
Yield: Makes about 3 cups
Ingredients
• 1/4 cup unsweetened cocoa
• 1/4 cup hot strong brewed coffee
• 1/4 cup butter, melted
• 1 teaspoon vanilla extract
• 3 1/2 cups powdered sugar, sifted
Preparation for Mocha Frosting:
1. Stir together first 4 ingredients until smooth. Gradually add powdered sugar, stirring until creamy.

Boo’s Tip: (1) You can sprinkle sifted powdered sugar on these cookies, if you wish. However, they are delicious without it. (2) You can also add some chopped walnuts or pecans to the cookie dough batter.

I'm so happy you like the recipes! We were very apprehensive about our daily recipe blogs, so we really appreciate your positive feedback.

Since your big sis doesn't like raisins, you don't have to put raisins in the recipes. You can substitute dried cranberries, cherries, or just increase the chopped nuts a bit. They're still good, that way!! :)

Happy Election Day Tuesday, November 2, my friends! I hope that you enjoyed yesterday’s recipe and will enjoy today’s recipe, too. It’s a little more complicated, because it has to be baked, but Mom is watching me very closely and she even showed me how to turn on the oven…Woo Hoo!!

So, I have the oven on and I’ve wacked those pecans and we’re ready to make the cookies.

Spicy Oatmeal Cookies
Yield: Makes about 5 dozen
Ingredients
• 3/4 cup chopped pecans
• 1/2 cup butter
• 1 1/2 cups sugar
• 1/2 cup molasses
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 3/4 cups all-purpose flour
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 2 cups uncooked regular oatmeal
• 1 cup raisins
• Parchment paper
Preparation
1. Preheat oven to 375º. Bake pecans in a single layer in a shallow pan 8 to 9 minutes or until toasted and fragrant, stirring halfway through. Let cool completely (about 30 minutes).
2. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar and molasses, beating well. Add eggs and vanilla; beat well.
3. Stir together flour and next 4 ingredients. Add to butter mixture; beat at low speed until well blended. Stir in oatmeal, raisins, and pecans. (If desired, store dough in an airtight container in refrigerator up to 1 week.)
4. Drop cookie dough by heaping tablespoonfuls 2 inches apart onto parchment paper-lined or lightly greased baking sheets.
5. Bake at 375º for 9 to 10 minutes or until lightly browned. (Bake chilled dough 10 to 11 minutes.) Cool on baking sheets on a wire rack 5 minutes; transfer to wire racks, and cool completely (about 30 minutes).
Note: You get both crispy and chewy in each bite of these cookies.

Boo’s Tip: I’m not allowed to handle sharp objects, so she’s not letting me chop the nuts. Instead, she taught me a very quick and easy way to “chop” them for baking. All I have to do is put the nuts in a plastic baggie (Be sure to close the baggie) and I take a heavy object, such as a rolling pin and whack them good.

Tips & Tidbits from Boo Kitty ♥
Happy Monday, November 1, 2010!! I am honored and humbled to be chosen as a candidate for December COTM. I am also a little nervous, but I pledge that I will do my best, each and every day. This month’s catpaign will probably curtail my regular blogging to my good friends and I apologize in advance and hope that you will understand why you might not hear from me as regularly, as usual. I also look forward to meeting new kitties and making some new friends during the month, too.

I thought and thought and though about my platform and frankly, I’m only a one-year old kitty, so I don’t have a lot of experience - there are no other kitties in my family so I can’t talk about them, and I’m not talented, nor do I do tricks. However….I do like to supervise my Mom in the kitchen, so with the Holidays coming, I thought, why not share some holiday treat recipes with all of you?

My good friend, Sammi Sue was our beautiful Queen in June and in both May and June, she delighted the entire channel with many wonderful recipes for kitties and some for hoomans, too! Well, I think she’s got us kitties covered for quite a while, so I thought I’d share hooman Holiday Goody Recipes. I’ll have mostly cookies, some cookie bars, a few candies, and some fun appetizers to whip up when company drops by. Many of the recipes are some that my Mom has made through the years and some were passed to her by special friends. And, for a very special treat, I will be including recipes from some of the CC Kitties and their families, too!

So, with all that said, Welcome to “Tips & Tidbits from Boo Kitty”! (Thanks to the July King Zaboo & the Nice Crew for my new blog title!!)

My contribution will hopefully be a special little tip, each day. Today, I need to start slow and easy, and what could be easier than these tasty no-bake cookies?

No-Bake Chocolate-Oatmeal Cookies
Yield: 4 dozen
Ingredients
• 2 cups quick-cooking oats, uncooked
• 2/3 cup peanut butter
• 1 (3 1/2-ounce) can flaked coconut
• 1/4 cup cocoa
• 1 teaspoon vanilla extract
• 2 cups sugar
• 1/2 cup milk
• 1/4 cup butter or margarine
Preparation
Combine oats, peanut butter, coconut, cocoa, and vanilla, mixing well; set aside.
Combine sugar, milk, and butter in a small saucepan; bring to a boil. Cook 1 minute, stirring constantly. Pour over reserved oat mixture; quickly stir to mix well.
Immediately drop by heaping teaspoonfuls onto waxed paper-lined baking sheets; let cool. Carefully remove from waxed paper to serve.

Boo’s Tip: You can add chopped pecans, walnuts or peanuts to the cookies for a fun addition.
